Baby Biryani

This veggie packed rice is lightly spiced, making it a lovely introduction to curry flavours for babies.

This veggie packed rice is lightly spiced, making it a lovely introduction to curry flavours for babies.

You can use whatever vegetables you have on hand, and unlike a traditional version this baby biryani is all cooked in one pot!

🍲One Pot Wonder

Ingredients

2 cups basmati rice

4 cups water

1 tbsp curry powder

1/2 tsp ground cumin

4 cloves

2 cardamom pods

1 stick of cinnamon

1/4 cauliflower

1 carrot

60g green beans

2-3 tbsp frozen peas

OPTIONAL: Additional seasoning for grown ups such as salt, ginger, fresh green chillies and fresh coriander

Method

-Wash the rice, then add to a pot with the water and spices

-Peel and grate the carrot, chop the green beans into 2cm pieces, and chop the cauliflower into small florets, then add to the rice

-Cook the rice in a rice cooker, instant pot or on the stove until all the water has been absorbed and the rice is light and fluffy

-Remove the cinnamon stick, cardamom pods and whole cloves

-Stir in the frozen peas, allowing the heat from the rice to warm them through

-Serve with plain yoghurt, cucumber or roasted veggies
